Canned cheese sauce

I was at Sam's this morning and saw something that was great news for me. In addition to the #10 cans of Bakers and Chefs nacho cheese, they are now carrying plain cheese sauce as well. biggrin.gif My short-term rotation food storage is much improved by this. At only $5.63 a can, this is a very afforable way to ensure we have some cheese options if we find ourselves in a situation where money is tight or fresh cheese supply is tainted or scarce.

I can get about 6 big family-sized meals out each can, probably double that if I'm being stingy. After I open a can, I simply put the unused amount into zip bags and freeze them. It thaws very well with no change in texture that I have noticed.

This is a fairly cheap cheese sauce, but I've found with the nacho sauce that simply adding some fresh milk makes it much tastier. (As proof of this, I made nachos with this canned sauce for a ward function a while back and received numerous compliments on it. One sister was amazed it started out with such humble origins.) And if we're in a situation where we don't have fresh milk, I'm sure we'll just be happy to have the cheap cheese versus nothing at all. (Oh, mixing with cream of chicken or mushroom soups like for a casserole helps the flavor too.)

Those are good deals. I've thought about getting those for my food storage, but I've also thought that it may be difficult to keep it from spoiling after opening if we're living without refrigeration.

Yeah, they aren't for no power times unless you're making community meals at the church house or something. But I can see a lot of situations where we could need our food storage and still have power. (Thus, I have a garage freezer filled with short-term storage items.)Cheese is a sorta frill item anyway... non-essential, but nice to have. These are less expensive than canned cheese soup (which is almost the same thing) and way less expensive than velveeta (which is icky to me.) They are very easy for me to rotate in my regular cooking and can save me money as well.
