Blame Hiccups, I was forbidden from using the name I usually use. Something about keeping her super secret identity a secret ;)

Looks to be a thickener... also, it's used as a substitute for gluten for people who have allergies.

Seriously, xanthan gum derives its name from the strain of bacteria used during the fermentation process, Xanthomonas campestris. Xanthomonas campestris is the same bacteria responsible for causing black rot to form on broccoli, cauliflower and other leafy vegetables. The bacteria form a slimy substance which acts as a natural stabilizer or thickener. The United States Department of Agriculture ran a number of experiments involving bacteria and various sugars to develop a new thickening agent similar to corn starch or guar gum. When Xanthomonas campestris was combined with corn sugar, the result was a colorless slime called xanthan gum."

Yes, it from Piers Anthony's Xanth series. Nope I have not read them yet.

If you read Xanth, stop after book six. The series got pretty lame after that.

The first six are great. Piers Anthony is a weird author. He usually starts out his series with world class writing. Purely great stuff. Then, the longer his series goes, the worse they get. I read the first three Blue Adept books, for instance, and loved them. The second trilogy in that series sucked more than a Hoover vacuum cleaner. Actually I can't claim that the whole second trilogy sucked - I couldn't finish the first book of the second trilogy.
