Gluten Free Diet


Anyone here on a gluten free diet?  I've got someone in our ward who has just had to switch over to gluten free and I'm looking for info for him.

Mirk, do they have a gluten sensitivity? Or are they a true celiac?

There are entire forums on the web for celiacs, but they'd be helpful for people with the less serious wheat sensitivity as well.

One thing to consider is that some people who can't take wheat anymore can still handle spelt. (An early form of wheat.) I've got some bread recipes for spelt if you're interested.

Buckwheat is a good non-gluten grain that is relatively inexpensive. Just make sure you get it from a place that doesn't also process wheat.

My daughter seems to be sensitive to gluten and/or wheat. We found some really good oat flour animal crackers in the Fred Meyer health food section. I don't have much more to offer than that.

I've got a number of friends who have this gluten intolerance, a couple with fullbore celiacs. There's quite a bit of information out there now about it. It used to be strictly a specialist deal, but now just going to the regular supermarket, you'll find many packages labeled "Gluten Free".

There are a lot of things that have wheat in them, you wouldn't suspect. Licorice for example is flour, coloring, and sugar. Salad Dressings often have it... A lot of cooking spices aren't safe. So you have to really keep your eyes peeled.

There's a woman in my ward who has celiacs. She's taking an experimental drug right now, that's supposed to help with it. And so she has actually been eating wheat... and apparently she thinks it's working (at first she thought she got the placebo... :) ). So I guess (if we don't wholesale condemn all the evil pharmaseutical companies) there's a lot of hope, I guess that such a thing will be treatable.
