Potato Skins


Do you like to eat potato skins?

I do. Anyone have any favorite recipes for potatos? What are some tricks to use to keep them from going green or sprouting?

I don't know if I specifically like the skins, but I eat them. Unless you're talking about skins loaded down with cheese and bacon and sour cream and crap. Which is yummy...but I try to avoid that variety.

I have tons of favorite potato recipes--baked with chili/soup/etc., twice baked, mashed with garlic/cheese/sour cream, roasted cubed, parsley buttered, soup, funeral, au gratin, scalloped, french fried, tortilla frita, hashbrowned...

To keep them from sprouting or whatever, use them up quickly. wink.gif Or keep them in a cool dark place or in the fridge.

I love potatoes. I love them so much. I think I could live off potatoes. Seriously.

Potatoes, chips, fries and spuds.
Potatoes are good for chicks and studs.
Potatoes make me big and strong.
With potatoes for dinner, you can't go wrong.
Potatoes of white, red or yellow.
Potatoes will make you a sexier fellow.
One potato, two potato, three potato, four
Potatoes for all! The rich and the poor!

The stuffed potato skins are good, of course, but when I have a baked potato, or potato wedges, or whatever, I'll eat the skin then too...

Oh and uh, yes, we eat the skins around here. Even in mashed potatoes. Yummy. Keep them in the dark to prevent them turning green. Keep them as cold as you can - during the winter you could get away with keeping them in the garage, as long as they're in a opaque container to exclude light. Don't let them freeze. By late winter, there's nothing you can do to prevent the sprouting - once they start, put them in the ground and grow yer own!

No, I'm serious.

I have gravy with my fries, or ketchup. (And sometimes gravy AND ketchup with my fries, with a lot of vinegar and salt and pepper as well. It looks and sounds disgusting, but a good friend in High School introduced me to that particular combo, and I still have it some times.)

For my fry sauce I pretty much do even parts mayo and ketchup. Not only do I use it for my fries, but put it on my burgers.

I first tried it while at BYU. Me and my buddy use to hit Apollo Burger/Burger Supreme about once a week. That guy ate the belt buster each time, a triple burger. That thing was huge.
