Do you enjoy eating vegetables? If so, which ones do you enjoy? I know a lot of grownups who even still prefer to eat meat... lots of meat, but ain't keen on veggies.
With the latest thanksgiving I found a couple of new vegetables that I used to hate but now really liked... yams and sweet potatos... maybe it was the maple and pecan glaze they were served with... but, they were numnum...
Other veggies I like are fresh, non fake store variety, tomatoes, sweet onions, and green beens.

I do like veggies. I like garden grown green beans a lot with new potatoes. I think I like most of the vegetables. I drew the line at lima beans and brussell sprouts which I thought were gross. But my parents brought me a dish that had lima beans from a Greek restaurant last week and it was so very yummy! Corn is a favorite and I am not just saying this because I live in Nebraska lol.
I love vegetables. So much that I think I'd really be okay with being a vegetarian. The only one I don't particularly care for is brussels sprouts. I guess my favorites are cucumbers, roma tomatoes, red bell peppers, sweet onions, and olives. Add some feta, red wine vinegar, olive oil, black pepper, and oregano, and you have Greek salad--my favorite dish in the whole wide world.

If I were a vegetarian, I'd probably die of malnutrition. I like green beans, corn, broccoli, onions, tomato (only cooked in sauces though), carrots, cooked bell peppers in small doses mixed with lots of other stuff... I tolerate some other stuff, but I have to go out of my way and make a special effort for it.
I don't eat that much meat either. Lots of dairy. Lots of carbs.
I really like green beans, green chile, aspargus, broccoli, jicama, zucchini and cucumbers. I like tomatoes, brussel sprouts, carrots, celery, lettuces, green onion, spinach, corn, peas, squash and yams. I can tolerate depending on mood onions, bell pepper, cauliflower and mushrooms. I do not care for lima beans. I like potaoes, but these days, I mostly just eat the skins.

Love veggies! Carrot sticks, celery sticks - essential for any road trip. Right up there with fig newtons.
I love green beans fresh from the garden when they snap because they are so crisp. Fresh corn on the cob and sweet potatos that have been baked. I also like squash. Freshly picked and creamed spinach. Bib lettuce. Radishes. OOOH and fresh garden tomatos that have that wonderful homegrown flavor that just tingles the tastebuds and are big enough for one slice to cover your bread. Mmmmm!
Garden peas and sugar snap peas. Eggplant. Tender butterbeans. Of course, eating okra in our household is practically the 11th commandment.
Broccoli (little trees) are a fave for everyone in our house. We stand them up in our mashed potatos and make little roads with our forks. Uh. . . I mean. . . we USED to do that. And we don't make little lakes and rivers with our cheese sauce or gravy anymore . . . when people are looking.
Love roasted peppers of any kind even the hottest ones.
I'm with Ros on the sweet potatoes - forget that carmelly crap and marshmallows!! Save those for S'mores. Sheesh. Only I add a splash of OJ and a splash of heavy cream, too. Mmm!
I'm also into cabbage. Red or green. Steamed with a titch of butter and pepper. Guess it's my Russian blood.

I learned to appreciate vegetables more on my mission. For instance, I used to hate onions. My mom would hide onions in our food so that we wouldn't notice it. Now I love onions. You'd probably die of starvation in Ukraine if you didn't eat onions and potatoes. I used to hate broccoli, but now I'm alright with it. I still don't like the cooked variety. I love corn. Garlic is great, and good for your health, but I can't eat whole cloves (which is actually good for you and helps you get better if you're sick). There aren't many vegetables that I could just eat by themselves, but carrots are in that category. Sugar peas are a real treat. I loathe tomatoes and always will, although I eat them regularly to be an example to my children.

Arbi: My mission really changed my attitude about veggies too... Having gone to Italy, there everything is so fresh... even the canned tomatoes taste fresher... as weird as that seems... I guess it's just one more way God has made my life healthier by having had the chance to serve a mission.

mmmmmm....I LOVE veggies! I love them almost every which way. I wish I could get my family to love all the veggies I love. however...I have yet to eat a veggie burger I like.
Like arbi, I learned to eat veggies in the Ukraine. I had no idea veggies could taste good. Mom wasn't much for veggies - all we ever had were warmed over canned veggies. In my household, we do not have a can of canned veggies, except a couple I keep on hand to give away for food drives.
In Ukraine, all veggies are fried. Mmmmm. Probably reduces the nutritional content, but mmmmm.
I really got vegified in Southern California. Farmers market on Tuesdays and Saturdays. REAL farmers markets, where the booths are actually farmers selling veggies straight from the vine. Not like the ones around here where they sell soap and craft crap and pre-washed lettuce in bags... I would take $20 and come home with all I could carry. Meat became a condiment. Which is amazing because I like meat...alot.
Corn on the cob, avacados, peppers, tomatoes, strawberries year round!
I was very healthy when i lived there....that's what the sunshine will do for you.

Corn Potatos And I can stand carrots if they're with something else. I can enjoy stir fry vegetables in stir fry if there's also lots and lots of beef.

I grew up on a large acreage, and we had a huge garden. In the summertime, we'd go out every night, pick veggies, and that's what we'd have for dinner. Fabulous. And supper wasn't complete any day of the year without a green salad.
Favorite vegetable ever: beets
Stuff I'll only eat fresh from a garden: asparagus
Yum: yellow and green beans, tomatoes, carrots, corn, peas, potatoes, radishes, zucchini, cauliflower, broccoli, peppers, onions, lettuce, cucumbers
Stuff we didn't grow but I like as an adult: celery, cabbage, turnips, brussel sprouts, sweet potatoes, sprouts, mushrooms
I've never eaten 'cuz...I don't know, Canadians don't usually eat it? jicama, okra, some of the squashes, all those Chinese vegetables
And then I went and married a guy who only likes corn. Tolerates peas. Can choke down a slice of tomato in a hamburger. Although he did introduce me to the wonders of a ham and pickled beet sandwich.

I prefer my veggies in some kind of East Asian cooking with some kind of sauce or some kind of Mediteraenian food.
I love lots, especially:
cabbage snow peas onions watermelon tomatoes eggplant PEPPERS!!! green bell, serrano, garden salsa artichokes sugar snap peas verant green beans, sauteed in sesame oil or terayaki, with garlic garlic
