2 5.9 oz Chocolate pudding boxes 2 cups cold whole milk 2 T. Stephen's mint truffle hot chocolate powder mix 3 (?) C. heavy cream 3 +/- T. powdered sugar 1 T. vanilla
Mix pudding with milk and mint truffle hot chocolate powder. Spoon 1-2" layer in bottom of oreo crust. Whip cream with powdered sugar and vanilla. Stir in half or so of the whipped cream into remaining pudding, making a lighter brown "mousse" mixture. Spoon the mousse mixture in pie shell to top. Spoon over some remaining whipped cream. Let sit in fridge for a couple hours and enjoy!
You can spoon the leftover's into glasses for pudding cups - top with whipped cream or a crushed oreo cookie. Yummm!

Cool weather food is supposed to be hot. Like pumpkin pie and apple cobbler, not some pansy little "chilled" thing that tries to be a real dessert. Humph!
mmmm....last night we made apple pie! The best part is that we got the apples at Costco, so they were HUGE and what was supposed to take 6 apples only took 4, so we totally have plenty to make another!
Apple pie for breakfast is the best, especially when you take it to work! :)

If you like soup Coco I have a great recipe for Tortellini Soup that is great for cooler weather. I made it for a family that had a baby early last spring and they still keep asking me for the recipe.
1 lb. italian hot sausage 1 lg. onion, chopped 2 T. garlic 5 cans beef broth 1/2 c. red wine vinegar 2 cans tomatoes, cut up 6 to 8 carrots, sliced 1 tsp. basil 1 tsp. oregano 8 oz. tomatoe sauce 4 to 5 zuccini, sliced 1 box lima beans (frozen) 3 T. fresh parsley 12 oz. cheese tortellini (or any other you may have one hand)
Fry beef, onion and garlic: drain. Add all ingredients except tortellini. Simmer until vegetables are done. Bring to a rolling boil. Add pasta. When done, serve.

The soup looks great, Ponch... liking the hot sausage... the red wine vinegar.... wait just a flippin' second!! Did you say lima beans?? Aw, dangit. Lima beans sorta' taste like... I dunno... cottonballs.

Well, I DAAARRE you to try the soup WITH the lima beans! But if you're gonna be a whiner like one of my kids then omit the lima beans and put in some other veggie. However, you can barely taste them in the soup. Sheesh.
