We're going into my favorite time of year, where a lot of fresh local produce is in season, and my mom's garden overfloweth. I'm getting lots of cherry tomatoes, and the romas are coming right behind. That's all that survived in my garden, but it looks like we'll have a bumper crop.

Growing up, my favorite harvest meal was pretty much everything from the garden. Corn on the cob, sliced beefsteak tomatoes, cucumber salad, sauteed zucchini. Maybe a little homemade macaroni and cheese.

Yesterday we grilled some chicken breasts and had a salad bar. Yum!

Ok, so I went out to my little garden and gathered a bunch of yellow squash. I have a sun-dried tomato basil pesto sauce begging to be used, so I'll cook up some pasta and roast the squash, serve it with the pesto. A garnish of sun-dried tomatoes, basil from the garden, and parmesan should make it almost too pretty to eat.

We had Thai-style beef stir-fry and rice tonight.

Tomorrow is vegetarian chili in the crockpot-oh, wait. I got the Hot Jimmy Dean sausage, so never mind on the vegetarian. I use about 1/3 to 1/2 lb. for the whole pot. Maybe cornbread. thumbsup.gif

Tonight we had what our middle child has termed "garden dinner." (And apparently he really likes garden dinner because he was on the phone to his uncle ranting about how he loves garden dinner.) We had roasted yellow squash, zucchini, green beans and carrots and also chili.

The only thing not from the garden or food storage was the carrots. My carrots didn't germinate in the garden. I know what went wrong, but I'm still deciding if I'm going to grow carrots next year, my sophmore gardening year. Carrots are pretty cheap in the store still.

I simply cannot wait for the watermelons in the garden to be ready. If they come in as well as they are promising to, we'll be giving lots away.

We went camping this weekend and for our dinner the first night I made a basil lime chicken with brown rice and green beans in the dutch oven. It came out very well, though Xiljian thought it was a bit too lime-y. I don't understand what that means. But then I like me some lime-y. Next time I'll go twice the basil and half the lime.

We had another garden dinner. (Ok, technically this was lunch, not dinner.) We had fried zucchini, yellow squash and green beans with corn on the cob. I'm thrilled that some of the corn I thought wasn't going to yield anything actually did. (Saddest, sparsest, short corn you ever did see. Glad I planted two types, because I would have thought I did something wrong if not for the other kind coming up lush and green and thick with leaves.)

I'm really liking the effect the garden is having on the family. It puts us more in the mind to eat what we already have and it's teaching the law of the harvest to the kids. Even my non-veggie eater likes to help in the garden.

I'm thinking some sort of veggie soup for the next garden dinner.

And tonight was a really yummy, fall-apart beef pot roast that Xanth made in the crock. I love it when I can get such a great dinner and only have to make gravy. biggrin.gif

I did some scallops cooked in bacon from a hog I had slaughtered. I made a cream sauce of one cup heavy cream, 2 TBS each of Dijon mustard and maple syrup, and 1/8 tsp salt.

By itself odd taste, over seafood, it is great, a little goes a long way. Had extra sauce over flounder and yellow/saffron rice the other night.

Made a chocolate caramel turtle cheesecake the other night too for my wife's birthday. I made the crust from oreos with chocolate filling I crushed in the food processor, toasted the chopped pecans in butter with a couple of sprinkles of salt. So good. I really love this cheesecake, it is much fluffier and lighter and a much richer chocolate flavor that a typical cheesecake. If anyone wants, I will post the recipe.

Chocolate Caramel Cheesecake

Below is the recipe, the modifications I did and will do are: I made the crust from chocolate filled Oreos, about 3/4 of the package, and used them just like the graham crackers with the sugar and butter. I used the whole cookie. Make sure you go part way up the spring form pan with the cookie crust. Don't over bake or the filling in crust gets caramelized.

Next time, I will use 50 or maybe 60 of the individual caramels, I wanted more caramel. It is one tablespoon of milk per 10 caramels used.

Sautee the pecans in a tablespoon or two of butter with a couple of dashes of salt, doesn't take too long, don't burn them. Then mix with the caramel sauce.

Next time I will use Ghiradelli double chocolate chips. I used slightly more than a cup of chips for melting.

I really beat the filling for a lot of air in it, helps make the filling fluffier and lighter. I added the rest of the chips into the filling for even more chocolate.

When serving the cut slices, I used the squeezable caramel syrup to drizzle around for presentation.

This is the best cheesecake, and is sweeter than most cheesecake, defintely a better chocolate taste than most.

2 cups graham cracker crumbs
1/3 cup white sugar
1/2 cup butter, melted

30 individually wrapped caramels, unwrapped
3 tablespoons milk
3/4 cup chopped pecans

1 cup semisweet chocolate chips
3 (8 ounce) packages cream cheese, softened
3/4 cup white sugar
1 teaspoon vanilla extract
3 eggs

DIRECTIONS
In a medium bowl, combine graham cracker crumbs, sugar and melted butter. Mix well and press into the bottom and 1 inch up the sides of a 9 inch springform pan. Pour on melted caramel/pecan mixture and chill for 30 minutes.

To make the Caramel Filling: In a small saucepan, combine caramels and milk. Cook over low heat, stirring, until smooth. Stir in chopped pecans. Preheat oven to 325 degrees F (165 degrees C).

In the top of a double boiler, heat chocolate, stirring occasionally, until chocolate is melted and smooth. Remove from heat and allow to cool to lukewarm. In a large bowl, beat cream cheese, sugar and vanilla until smooth. Beat in the eggs one at a time. Fold 1/3 of the filling into the melted chocolate, then pour the chocolate mixture back into the filling and mix until no streaks remain. Pour into crust.

Bake in the preheated oven for 50 minutes, or until center is almost set. Place a pan of water on rack underneath cheesecake as it bakes to help keep it from cracking. Cool in oven with door cracked open. Refrigerate at least 5 hours before serving.

hungry.gif  Ok, where's the drooling emoticon?  I'll probably never make that dessert (I don't bake well...give me meat and potatoes and I can make a fabulous dinner), but I'd hog that cake up in a heartbeat.

I made homemade tortillas today. For lunch I made quesadillas. For dinner we'll have tacos.
I'm still learning how to make tortillas, so I'm still getting the hang of making them perfectly round and uniform. Commercial tortilla makers have the advantage of using dough rolling machines.

2 and 1/2 more hours... 2 and 1/2 more hours....

Okay, so it's not THAT bad. They are in the living room playing Deal or No Deal and my daughter is the host. We got prizes like lotions, notebooks and calendars with cute little puppies and nail polish and lip gloss and other girlie stuff... they are having a ball.

Then we'll do Taco Bar for dinner and have a horsey birthday cake. That's horse DECORATIONS you sicko cannibals. rolleyes Then presents. Then HOME! Yahhhhh!
