Sunday Dinner: Both regular and Meatless Spinach/Vegi/Black Bean/4 Cheese-Lasagna, Caesar Salad, fresh out of the oven sourdough bread. FHE Desert (later tonight cause hubby has tonight off but works tomorrow night) Bread Pudding.
Bbq shredded meat with biscuits, pears and broccoli. I heard it was good. I was feeling queasy from my allergy eyedrops, (don't ask me how, but that stuff puts a dreadful taste in my mouth) so I opted for sweetened FF yogurt.

I love cooking in the summertime. And with that in mind, I decided to bring back this thread. What are you having for dinner? Or what did you have last night?
Tonight our house is having a BBQ. It might be an extreme BBQ because the forecast includes the potential of thunderboomers. We're planning on having turkey burgers, baked potatoes, corn-on-the-cob and broccoli all cooked on the grill. I adore corn grilled in the husk.

The wife half has been dieting so lots of rabbit food and chicken, though I jump in on the weekends and make other things. Not that my eating the same diet foods she has been making are bad for me or anything.
The other night I did fried catfish in a cornmeal mix with yellow rice.
The other day I grilled some spicy citrus chicken with leftover yellow rice. I also, and this delicious, took onion and sliced it into half inch thick slices leaving all the layers together in the slices and then marinated it in extra virgin olive oil, pepper, and kosher salt (makes a difference) and grilled the together slices on the grill carefully turning. They were perfect and I just ate the onions straight, the consistency was perfect, especially with the rice.
My wife did make this zuchinni with a tangy lemon sauce that was good. The diet thing is making her try new recipes, which has been really good.

I don't know about tonight. We grill a ton this time of year. Last night was turkey kielbasa. The night before that I grilled chicken for a chinese cabbage salad.

Yes. Have you tried the chipotle kind? Mmmm, mmmm. I have a bunch in my freezer from when they were cheapo because the grocery store was gonna stop carrying them. Sadly, that might be the last of them. I haven't seen them other places.

Cukes, I used a specialty seasoning mix that my MIL gave me. It was an italian mix... it would probably be closest to a pesto powder mix. Then I added parmesan cheese, salt and pepper... and I think some onion powder to finely crushed up bran flakes. Sadly I can't give amounts because when it comes to seasonings, I cook by smell, taste, feel and instinct. I hope that was enough to help.

Has anyone tried that chicken marinade that's a 7-Up and soy sauce base? DANG that makes some good chicken. Our friends are making it tonight at the campsite. Yum.

Last night was chicken fried pork chops, garlic and herb mashed potatoes and green beans. (Wasn't planning on pork two night in a row, but there was this lovely package of marked down tenderized pork chops at the store.) I used my bran flakes, wheat flour and seasonings for the breading. I am sneaky with those bran flakes. I'm also on this traditional meals kick lately. Might have to do something less June Cleaver tonight.

Tonight was: seasoned roasted yams, broccoli, pears and parmesean herb wheat biscuits. (That's right, no meat. We did serious meat the last two nights and I was tired of it.) The yams stole the show. I cut them into cubes, tossed them with some olive oil and roasted them. When they were done I sprinkled this seasoning mix on them:
3 parts salt 2 parts allspice 1 part onion powder 1/2 part pepper 1/2 part ground clove (ground to a powder in my mortar and pestle)

I did a crispy beef yellow fried rice with broccoli florets, scallions, onions, cilantro, peas and carrots. Dang, that was good.

Sat. I made carne asada with a marinade I assembled, and then grilled the steak to medium rare and sliced it. Took fresh peppers from the garden, onions, coated them in olive oil and grilled them on the grill along with portabella mushrooms. The diced fresh tomatoes from the garden. Put it all on warm tortillas, then poured on a spicy queso white cheese sauce and sprinkled it with fresh cilantro. Oh yeah!
Then on Sunday, I smoked tandoori chicken, started marinating the chicken 24 hours before. Made up the marinade of plain yogurt, fresh grated ginger, chopped onions, minced garlic, lemon juice, salt, cayenne, and garam masala, and some food coloring for presentation.
I also roasted fresh from the garden peaches and cream sweet corn on the grill. And made some homemade flat bread with mas harina.
I was going to make naan and cook it on the grill, but did not have time.
Last night I made pork riblets with Sweet Baby Ray's BBQ sauce, that sauce is AWESOME!!!
