What's for dinner?


Mmmmm...lentils.... That sounds good, except we're out of tomatoes. And I only have one green pepper.

Maybe I'll make the other kind... Carrots, check. Onion, check. Pasta, check. Yup. Lentils are back on the menu!

I ended up doing something different with my lentils. I figured I would try to get some down my picky kid, so I basically turned into a bean dip. (A curry lentil bean dip.) He ate some with tortilla chips, so mission accomplished.

Hey, sounds good. Lentil dip... hmmm... confuse.gif

Chicken stew is yumm-o. Cook bacon in pot, remove to paper towel. In bacon drippings, cook onion and some thyme 'till tender. Add two cans cream of chicken and two cans water and potatoes and carrots and cook 'till tender. Add some green beans from garden. Cook some more. Stir in cooked, cubed (or shredded) chicken and the bacon (crumbled). biggrin.gif

Tonight is dinner at my son's school open house for the autistic program. The last time they had a dinner they provided lasagna and it was yummy. smile.gif

My daughter suggested chicken and rice to go with the corn. Works for me.

That's my favorite blog, too! Wow! I've made her Marlboro Man sandwich and it rocked! We're having that next week...

Anyway, tonight is chicken and mashed potatoes and gravy and some steamed broccoli and carrots. 5yo girl can't get enough broccoli. MrCoco is dumbfounded by this, not being much of a vege man ('till he married me). smile.gif

Last night we had butter chicken. That is some good stuff. Curry, the nectar of the gods!

Tonight is baked potaoes topped with chili (beans and meat) and the biggest danged artichoke I've ever seen. (I had to cook it in my pasta pot with the strainer thingie in there.) I will be modifying my potato by removing the innards. I'll likely wash it down with a protein smoothie for dessert.

We had shepherd's pie, homemade bread, and sliced kiwi and pears. Not super healthy, I suppose...but not super processed. shrug.gif

Tonight was awesomely charred Lil' Smokies with mustard and Mustard Potato Salad (did I mention mustard?) and watermelon and S'mores up the canyon for cocokid#2 turning 11 and cocokid#4 turning 3's BIRTHDAYS!! Yeehoooo! Plus Superman cake. biggrin.gif

Then the fam went home and I stayed up with 11yo and her 5 friends who went snipe hunting and danced around the campfire chanting Wannahukkaloogie and telling ghost stories and Capture the Flashlight... ahhh.... fun times, I tell ya. relax.gif

Anyhoo-- tonight is the single most exciting thing in Coco's world. Yes, the event she waits for all year long. The thought that makes her happy when the world seems so grey... The memories of which linger in her mind and leave her giddy and speechless, or perchance a squeal escapes... Yeah, I realize I'm not a *writer* OKAY??

Anyway, it's the STATE FAIR!!!!!!!! w00t.gifheadbang.gif LOVE IT!!

We're talkin' cows. We're talkin' pigs. We're talkin' goats - the freakya$$ big ones that carry your tents and stuff when you go camping! We're talkin' Navajo tacos! We're talkin' chickens. We're talkin' rabbits. We're talkin' the Juice Man. We're talkin' samples out the wazoo. We're talkin' trying to win the flippin' Yellowstone snowmobile trip for the 8th time. We're talkin' awesomely beautiful quilts. We're talkin' coolio 4-H displays. We're talkin' wacko artwork. We're talkin' carnival rides cuz Mommy's not prego this year! We're talkin' the biggest horse in the world (which isn't quite as cool because I saw him a couple weeks ago at CAL Ranch). But there's the biggest pig in the world. We're talkin' beer bellies. We're talkin' mullets. We're talkin' brastraps with racerback tanktops. We're talkin' almost winning a scooter at the rockclimbing wall (that's MrCoco, not me). We're talkin' peach salsa from the Masons.
